CRANBERRY SAUCE

Yield 2 cups

 
12 ounces fresh cranberries
1/2 cup maple syrup
grated rind and juice of one organic orange
1/2 tsp ground ginger
1/2 tsp ground cardamom
Dash of cinnamon
 

 


Wash the cranberries. Combine all ingredients in a medium pot and cook on medium heat for 10-15 minutes, stirring, until the cranberries have popped and the sauce is thick. Serve hot or cold.
