GRANOLA

Makes about 2 quarts          

 
3½ cups 7-grain cereal
½ cup each:
sunflower seeds, wheat germ, cashews
1/3 cup each: coconut, sesame seeds, almond slices
1 cup dried apple pieces
1 tbsp chia seeds
1 tbsp vanilla extract
¼ cup olive oil
½ cup honey
1/8 cup maple syrup
 

 


Mix the dry ingredients together. Add vanilla extract.

Mix in the oil. Using the same measuring cup, add honey and maple syrup. (Keeps the sweeteners from sticking to the cup.)

Spread on cookie sheets.

Bake about 20 minutes in oven pre-heated to 275 degrees. Mix up the granola after 10 minutes to keep it from burning. Mix again in another 5 minutes.

When the granola is cooked, spread it out on something like a brown paper shopping bag. This absorbs excess oil and allows the granola to cool without congealing into a big lump. After a while, spoon the granola into a jar.
